Chicory fibre
Chicory fibre (inulin and oligofructose) is extracted from the roots of chicory plants.
Chicory fibre is a soluble vegetable based granulated powder that is dissolved in a fluid. This fluid adds fibre, reduces calories, and increases viscosity.
Chicory fibre is used in dairy foods, baked goods, and sweets and may be used as a sugar substitute or in clean label end products.
The Inulin version provides mouthfeel in a large number of applications, and the Oligofructose version is suitable for applications requiring high solubility without affecting viscosity.
