The path to the Keyhole label goes through the recipe

Meet the requirements with insight into recipes, ingredients and documentation. Use the Danish DTU Food Institute's declaration calculator to assess whether your product meets the criteria.

The Keyhole label is an official nutrition label that makes it easier for consumers to choose healthier products. The label may only be used if the product meets a number of limit values that vary depending on the product category. The requirements apply to, among other things, saturated fat content, sugar content, salt content, fibre content and energy density.

The label is used throughout the Nordic region and is administered by the authorities in Denmark, Sweden, Norway and Iceland.

It starts with the recipe

When you are working to optimise the nutritional profile, the recipe for the product is the natural starting point. This is where you determine how the ingredients work together and how nutritional goals can be achieved without compromising on function, taste or texture.

If you are looking to utilise functional ingredients that make it possible to reduce salt, fat or sugar while still delivering the expected taste experience, we are happy to advise you on the right choice for your individual application.

It's not just about content, but also about balance, structure and process.

Salt is a good example. In addition to adding flavour, salt also contributes to shelf life, texture and preservation. That is why salt reduction requires careful consideration and the right ingredients. We work with solutions that maintain both flavour and functionality, even when the salt content is reduced.

In addition, our range includes solutions within:

  • Fibres that add sweetness, texture and a prebiotic effect.
  • Flavours that support the taste experience in reduced products.
  • Starches that restore satiety and consistency.
  • Sweeteners, both natural and artificial, for sugar reduction.
  • Dried fruit, for natural sweetness and texture in clean label products.

Whether you are reformulating or developing from scratch, we can help you find a solution that fits your recipe and the market.

A practical Danish tool for assessment

To assess whether a product meets the requirements of the Keyhole label, you can use the declaration calculator developed by the Danish Food Institute (DTU).

Here you can enter the nutrient content and get a quick indication of whether the product matches the criteria.

Please note that the calculator is indicative and does not replace the final documentation required to obtain the label.

The documentation must be in place

To use the Keyhole label, the product's content must be documented.

This typically requires analyses, specifications and coordination with the authorities' guidelines. We work with partners who can provide specialised documentation, and we ensure that you have an overview of what needs to be in place before you move forward with development.

Whether you are starting with an idea, a market requirement or an existing product that needs to be adapted, we contribute with open discussion and concrete suggestions.
