Pearl sugar

Also known as nib sugar.

Pearl sugar is produced from pure sugar, applying a process of agglomeration. The agglomeration process changes the properties of the powder so that granulated sugar can be created in many different size divisions.

Pearl sugar is available in a variety of granulations and is used both for decoration and in confectionery where the coloured flavour varieties produce an attractive visual effect and fresh flavours.

Pearl sugar has no sharp edges and has a pleasanter feel in the mouth than sugar with coarser granules. Pearl sugar is also used in baked goods because it does not melt during baking and does not brown.

Can be delivered both as conventional and organic.
