Carrageenan E 407

E407 is a carbohydrate extracted from among other things red algae known as Irish moss. It is a natural thickener and stabiliser. 

Carrageenan is a white creamy powder with a gelling effect that increases the viscosity of dairy and meat products due to its pronounced ability to bind proteins. 

Carrageenan is substituted for gelatine in some applications, for example where a vegetarian alternative is desired.
