Agar E 406
E 406 is a gelatinous hydrocolloid, produced from extract of algae.
Agar is a carbohydrate and a naturally occurring thickener and stabilizer. Agar forms a solid gel, even in small concentrations. Even in small concentrations Agar forms a firm gel due to its content of agarose.
Agar is often used in combination with other stabilisers in applications such as jelly desserts, bakery and dairy products, oral gels and capsules.
