Flavour and colour differ depending on the cocoa powder variant.
Alkalised cocoa powder has an added acidity regulator. The soaking process raises the acidity level, resulting in dark cocoa powder and intensifying the cocoa taste. The cocoa powder is less bitter and has a stronger chocolate flavour. The alkalisation level can be varied, affecting the colour, which ranges from light brown, brown and dark brown to red and deep red.
