Sorbic acid E 200

Is naturally present in fruits such as strawberries, cherries, rowanberries and tomatoes. Sorbic acid is synthetically produced for industrial use by combining malonic acid and crotonaldehyde. The product is purified by crystallisation in water, in which it is highly insoluble.

Sorbic acid is a preservative which inhibits the development of bacteria, yeast and moulds in foods.

Sorbic acid is primarily fat-soluble and is typically used in the bakery, margarine, dairy and meat industries.
