Sodium benzoate E 211

E 211 is the sodium salt of benzoic acid. Sodium benzoate is naturally present in cranberries and cowberries but is usually synthetically produced.

Sodium benzoate is used as a preservative in a wide range of foods and acts by inhibiting the growth of yeast, moulds and certain bacteria, in particular. However, it is most effective in an acidic environment (pH between 2.5 and 4.5).

The product is widely used in the food industry.
