E 202 is naturally present in fruits such as strawberries, cherries, rowanberries and tomatoes. However, it is also synthetically produced for industrial use.
Potassium sorbate is the potassium salt of sorbic acid. Potassium sorbate is a preservative which is particularly effective against yeast and moulds in an acidic environment (pH<6).
Potassium sorbate is a white granular powder without odour.
Potassium sorbate is mainly used in the bakery, brewery, food, canning and meat industries.
