Ascorbic acid E 300

Ascorbic acid (vitamin C), E 300, is a vitamin naturally present in most fruits, e.g. lemons, oranges and blackcurrants.

Ascorbic acid is also produced synthetically by the chemical conversion of glucose to sorbitol, which is oxidised to sorbose by bacterial fermentation. Sorbose is oxidised to an acid which is processed with hydrochloric acid, thus producing ascorbic acid.

Ascorbic acid acts as an antioxidant in food, which means that the substance prevents exposure to oxygen from the air. In addition as an acid-regulating agent and color-stabilizing ingredient.

Ascorbic acid is mainly used in the fruit and vegetable, bakery, confectionery and brewery industries.
