Starter cultures have the ability to convert milk sugar (lactose) into lactic acid, and it is lactic acid bacteria cultures that extend shelf life and provide a characteristic flavour and texture. Dairy products such as soured milk, yoghurt, kefir and cheeses are where lactic acid bacteria come into their own. 

Probiotic cultures are beneficial bacteria that ferment milk and provide probiotic benefits that improve digestion, strengthen the immune system and promote healthy gut flora. 

Protective cultures extend the shelf life of food naturally without the use of artificial preservatives, which can reduce food waste and improve food safety.
