This shortens the time from decision to action, reduces pressure on approvals in critical situations and provides greater confidence in decisions because documentation and testing have already been completed.

The process can be organised, so that preparations are made at a pace that suits operations and without taking focus away from other tasks.

• The quality department, where requirements and documentation are assessed.
• The laboratory, where ingredients are tested and validated.
• Production, where practical trials must be carried out.

This could be done, for example, by scheduling the work during the low season or incorporating the approvals into existing processes. This way, the work does not become a disruption, but a natural part of operations – and the result is gradually more alternative ingredients ready for use when the market changes.
